- 2 cups unsweetened Almond Milk
- ⅓ cup sugar free powdered sweetener
- ½ cup chia seeds
- ½ teaspoon ground cinnamon
- ¼ teaspoon Kosher salt
- ½ teaspoon Vanilla Extract
- 4 ounces cream cheese
- 1 cup diced strawberries
In a medium sauce pan over medium heat combine, the almond milk, sweetener, cinnamon, kosher salt, vanilla extract, cream cheese, diced strawberries and lastly chia seeds.
Make sure to whisk continuously to combine all the ingredients and to not scotch the bottom of your sauce pan.
Cook for about 8 minutes or until your chia pudding begin is thick and the chia seeds are soft. Divide into 4 portions.
- Feel free to use whatever fruit you have on hand. Strawberries are delicious but you could use blueberries, raspberries, or blackberries.
- Choose an almond milk that is unsweetened. These are usually 1 carb per serving
- You can use any keto friendly sweetener you like and sweeten to taste
