Starbucks Egg Bites in the Instant Pot

Ingredients

  • 8 large Eggs
  • ½ Cup heavy cream
  • ½ teaspoon Kosher salt
  • ¼ teaspoon black pepper
  • 2 Cups shredded Monterey Jack cheese
  • 8 slices Bacon, cooked and crumbled

Instructions

  • In a large mixing bowl or blender, combine the eggs, heavy cream, salt and pepper. Blend or whisk until smooth.
  • Spray the egg bite molds with cooking spray and equally divide the cheese and bacon between the 14 egg cups. Pour the egg mixture evenly between the cups.
  • Spray 2 sheets of foil with cooking spray and cover the egg bites tightly with the foil. Set on the metal trivet. Pour 1 cup of water in the Instant Pot and set the trivet with the egg bites in the Instant pot.
  • Set on steam for 10 minutes followed by a 10 minute natural pressure release. Use a quick release to let the rest of the pressure out. Let cool and serve. Store in air-tight container in the refrigerator for up to 4 days.

Notes

  • Use foil instead or the lids that come with the egg bite molds
  • Blend the eggs in a blender for super smooth texture
  • Spray the foil with cooking spray so it doesn't stick to the bites
