- 1 pound Ground Beef
- ½ teaspoon Kosher salt
- ¼ teaspoon black pepper
- 1 Green Bell Pepper-chopped
- 2 medium Zucchini, chopped
- 1 cup Eden Black Soy Beans, rinsed
- 2 tablespoons tomato paste
In a large skillet over medium-high heat, combine the ground beef, salt and pepper. Cook and crumble the ground beef until it is cooked through. Remove any excess grease from the pan.
Stir in the green bell pepper and zucchini. Reduce the heat to medium and continue to cook for 10 minutes more, until the zucchini is fork tender.
Stir in the black soy beans and tomato paste. Let cook for 5 minutes more. Season with salt and pepper to taste and serve. Makes 6 servings
