Coconut Chicken Curry

Ingredients

  • 2 Tablespoons avocado oil
  • 1 ½ Pounds Chicken, cubed
  • ½ cup Diced onion
  • 1 Red bell pepper, diced
  • 2 Tablespoons minced garlic
  • 2 Tablespoons yellow curry powder
  • 1 Tablespoon Minced ginger
  • 1 Tablespoon ground coriander
  • 1 teaspoon Turmeric
  • 1 teaspoon Kosher salt
  • 15 ounce can full-fat coconut milk
  • 2 Cups chicken Broth
  • 1 Tablespoon Fish sauce
  • 2 teaspoons sugar free brown sweetener
  • 2 Tablespoons lime juice
  • ¼ Cup fresh cilantro for garnish

Instructions

  • Heat the avocado oil in a heavy bottom pot over medium-high heat. Add in diced onion and bell pepper and sauté for about 5 minutes or softened. Next, add in your garlic, ginger, curry powder, turmeric and coriander, sauté for a few minutes.
  • Add your cubed chicken and salt and cook for about 8 minutes.
  • Add in your chicken broth, coconut milk, fish sauce, brown sweetener and lime juice. Making sure to scrape the bottom of pot. Bring to boil and reduce down to simmer. Simmer for about 25-30 minutes.
  • Serve over cauliflower rice and enjoy!
