- 8 Ounces keto bread (I use Sola), cubed
- 12 Large eggs
- 2 Cups half and half
- 1 teaspoon Kosher salt
- ½ teaspoon pepper
- 16 Ounces ground breakfast sausage, cooked and crumbled
- 1 ½ Cups Shredded sharp cheddar cheese
- ½ Cup Shredded Parmesan Cheese
- 1 Cup sliced mushrooms
Preheat the oven to 400F and spray a 9x13 casserole dish with cooking spray. Take a baking sheet and spread out the bread cubes. Place into the oven and bake for about 8 minutes, or until toasted. Set the bread aside to cool. Lower the oven to 350F.
In a large mixing bowl, whisk together the eggs, half and half, salt, and pepper. Stir in the cooked sausage, both cheeses, and the toasted bread.
Pour the mixture into the casserole dish, top with the sliced mushrooms, and bake in the oven for 40-50 minutes or until the center is completely set. Serves 8.
