Ingredients

  • 2 Tablespoons butter
  • 1 Cup diced carrots
  • 1 Cup diced celery
  • ½ Cup diced onion
  • 8 Ounces Mushrooms, sliced
  • 4 Cloves Garlic, minced
  • 2 Boneless Skinless Chicken Breast, cut into 1 inch pieces
  • 4 Cups chicken broth
  • 1 teaspoon dried oregano
  • ¼ Cup chopped fresh dill
  • zest and juice from one lemon
  • salt and pepper to taste

Instructions

  • Heat the butter in a large heavy pot over medium heat. Stir in the onion, carrot, and celery and cook until softened, about 5-8 minutes. Stir in the minced garlic , sliced mushrooms and chicken breast. Cook until the chicken is cooked through, about 8 minutes.
  • Add in the chicken broth, oregano, dill, lemon juice and zest, and season with salt and pepper. Serve
