Peppermint Mocha Gluten Free Christmas Cookies Recipe

Kick off the holiday season with my Gluten Free Christmas Cookies recipe! Rich chocolate flavor with white chocolate chips and the perfect amount of peppermint. These super thick but soft cookies feel like Christmas in a cookie!

Ingredients

Instructions

  • Preheat the oven to 350F (176C) and line your cookie sheet with parchment paper or a silicone baking mat.
  • In a large bowl, combine almond flour, sweetener, cocoa powder, baking soda and salt. Next add in your softened butter, vanilla, peppermint extract and egg. Mix together with a hand mixer to combine ingredients.
  • Add your white chocolate chips and combine with a spatula. Using a 2 tablespoon cookie scoop, scoop out onto baking sheet 2 inches apart. Should make about 12 cookies. Flatten the tops of your cookie using your clean fingers or a spoon. Top with the crushed cane canes.
  • Place into already preheat oven and let bake for about 12 minutes. Let cool completely and serve.

Notes

I didn't us sugar free candy canes for this recipe because the add minimal carbs.  You could definitely use sugar free candy canes but they may be hard to find.
