- 1 tablespoon avocado oil
- 1 ½ pounds sirloin steak, cut into 1.5 inch cubes
- 1 teaspoon kosher salt
- ¼ teaspoon black pepper
- 3 tablespoons butter
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 teaspoon xanthan gum
- 2 tablespoons soy sauce (use tamari for gluten free)
- 2 tablespoons Worcestershire Sauce
- ½ teaspoon dried thyme
- 1 tablespoon chopped Parsley for garnish
Heat the avocado oil in a large skillet over medium-high heat. Add in your beef chunks and season with salt and pepper. Brown beef for a few minutes on all sides then remove from skillet to a plate and set aside.
Reduce the heat to medium and add the butter to the skillet. Stir in the diced onion and let cook until translucent about 5 minutes. Stir in the garlic and cook for 1 minute more. Pour in the beef broth and xanthan gum, whisk to combine ingredients. Then, stir in the soy sauce, Worcestershire, thyme, and return the beef to the pan.
Bring your liquid to a boil, then reduce the heat to a simmer. Let simmer for about 30 minutes or until the gravy has thickened and the beef is tender. Stirring occasionally. Garnish with parsley to finish.
