Andouille Sausage Sheet Pan Dinner Recipe

Equipment

  • 9x13 rimmed sheet pan

Ingredients

  • 12 Ounces frozen butternut squash cubes
  • 1 Red Bell pepper, sliced
  • ½ Tablespoon italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 Tablespoons avocado oil
  • 12 Ounces Andouille Sausage (4 links)

Instructions

  • Preheat the oven to 400F. In a medium size mixing bowl, combine your veggies, seasonings and avocado oil. Toss to coat.
  • Spread the seasoned vegetables on the sheet tray. Lay your andouille sausage evenly onto baking sheet in between your veggies. Bake in the oven for 25 minutes or until the sausage reaches an internal temperature of 165F using a problem meat thermometer.

Notes

Tips to make this sausage sheet pan dinner 
  • If you want to cut down on even more dishes, toss the veggies with the seasonings and the oil directly on the sheet pan.
  • Line the sheet pan with parchment paper for even easier cleanup

  • Serve over rice or pasta for a hearty, family friendly dinner.  For low carb or keto you can use a keto friendly rice like cauliflower rice or zucchini noodles.  
  • Serve with hamburger buns and melt cheese on top.
