Ingredients

  • ¼ Cup Olive oil
  • 2 ounces Salt pork, thinly sliced
  • 3 Tablespoons Onion, minced
  • 2 Cloves of garlic, minced
  • 2 28 ounce Cans crushed tomatoes
  • 6 Leaves Fresh basil
  • Big pinch of dried oregano
  • Kosher salt and pepper to taste
  • 1 Pound Ground Beef

Instructions

  • Heat the olive oil in a heavy bottom pot over medium heat.  Add the salt pork and cook until the fat is rendered.  Remove the salt pork from the pan and discard, reserving the oil.
  • Add the onion and garlic to the pan and sauté until translucent.  Pour the oil and onion mixture into the slow cooker, followed by the crushed tomatoes.
  • In the same heavy pan, cook the ground meat until cooked through.  Add the meat to the slow cooker with a slotted spoon, leaving the fat in the pan.
  • Cook in the slow cooker on low for 8 hours.  When ready to serve, add in your torn basil and oregano and season to taste.

Notes

  • You can use any ground meat you want in this crockpot spaghetti sauce...even sausage.
  • If you want to make this into a freezer meal: follow the steps above, but instead of putting the ingredients into a slow cooker, let them cool and put them into a freezer safe container.  When you are ready to cook the sauce, pull the container out of the freezer the night before, then cook in the slow cooker the next day.
  • If you want to cook this in the heavy pan instead of the slow cooker, Remove the onion and oil mixture to a bowl before you cook the hamburger meat.  Then when your hamburger meat is cooked, remove the fat, add the onion and oil mixture back to the pan, followed by the crushed tomatoes, then let it simmer, covered, for 1 hour.
