Keto Pancakes with Coconut Flour or Almond Flour
These keto pancakes with cream cheese are super easy to make. Just blend the ingredients in a blender cup and put into a hot pan. No hand mixing or dirty bowls to wash! Add your favorite mix-ins for more variety.

Heat a non-stick pan or griddle over medium heat and spray with cooking spray or melt a pat of butter or coconut oil in the pan.
Combine all ingredients in a blender and pulse until mixed. Alternatively, you can combine the cream cheese and eggs in a bowl and mix well with an electric mixer, then add in the remaining dry ingredients and vanilla.
Pour the batter into the heated skillet to make a pancake approximately 4 inches across. Continue with the remaining batter. You may need to work in batches.
Brown for a few minutes on both sides and remove from the pan to a plate. Serve hot with butter and sugar-free syrup, if desired.
