Keto Scones with Bacon

These easy low carb and keto scones are made savory with the addition of delicious bacon. They go perfectly with your favorite soup or as a snack.

Ingredients

  • 3 Cups almond flour (see my favorite on Amazon)
  • 1 ½ teaspoons Baking Soda
  • ½ teaspoon Kosher Salt
  • 4 Tablespoons Cold Butter, cut into cubes
  • 2 Large Eggs
  • 2 Tablespoons Apple Cider Vinegar
  • 2 Tablespoons Bacon Grease
  • 8 Slices Bacon, diced and cooked until crisp

Instructions

  • Preheat the oven to 350F and line a baking sheet with parchment paper or a baking mat.
  • In a large bowl, mix together the almond flour, baking soda, and kosher salt.  Add in the cold butter and use your hands, forks, or a pastry cutter to incorporate the butter into the almond flour.  In a separate small bowl, beat together the eggs vinegar, and bacon grease.
  • Pour the dry ingredients out onto your work surface and make a well in the center.  Pour the egg mixture in the well and mix gently, add in the bacon and  combine the ingredients with your hands. 
  • Form the dough into a flat disk about 1 inch thick.  Cut into 6 triangles and arrange onto the baking sheet.
  • Bake for 20-25 minutes or when a toothpick comes out clean.  Cool before serving.

This made 6 large scones.  If you want to make 12 smaller scones, first divide your finished dough into 2 equal portions, then form each one into a flat disc.  Cut each disc into 6 equal portions and bake for 15 minutes.
