Preheat the oven to 350F and line a baking sheet with parchment paper or a baking mat.
In a large bowl, mix together the almond flour, baking soda, and kosher salt. Add in the cold butter and use your hands, forks, or a pastry cutter to incorporate the butter into the almond flour. In a separate small bowl, beat together the eggs vinegar, and bacon grease.
Pour the dry ingredients out onto your work surface and make a well in the center. Pour the egg mixture in the well and mix gently, add in the bacon and combine the ingredients with your hands.
Form the dough into a flat disk about 1 inch thick. Cut into 6 triangles and arrange onto the baking sheet.
Bake for 20-25 minutes or when a toothpick comes out clean. Cool before serving.
