Heat the avocado oil in a large skillet over mediun heat.
Cook the onions and mushrooms until they're soft (about 8 minutes).
Add in the chicken thighs and continue to cook until the chicken is cooked through. This should take another 10 minutes.
Add in the spinach and cook until it is completely thawed.
Add in the chicken broth, heavy cream and xantham gum.
Bring to a boil and stir until thickened.
Serve inside your favorite crepe.
