Chicken Florentine Savory Crepe Filling

Chicken Floretine Savory Crepe Filling is a rich, creamy chicken, mushroom and spinach recipe. Perfect for brunch or dinner and made in just 30 minutes. Pair with my Easy 4 Ingredient Keto Crepes to make this a delicious meal! They're so good, it will be hard to eat just one!

Ingredients

  • 2 Tablespoons avocado oil
  • 4 Boneless skinless chicken thighs cut into bite size pieces
  • ½ Onion, diced
  • 8 Ounces Sliced Baby Bella mushrooms
  • 6 Ounces Package frozen chopped spinach
  • ½ Cup Chicken Broth
  • 1 Cup Heavy cream
  • ¼ teaspoon xanthan gum
  • 8 Crepes
  • Kosher salt and pepper to taste

Instructions

  • Heat the avocado oil in a large skillet over mediun heat.
  • Cook the onions and mushrooms until they're soft (about 8 minutes).
  • Add in the chicken thighs and continue to cook until the chicken is cooked through. This should take another 10 minutes.
  • Add in the spinach and cook until it is completely thawed.
  • Add in the chicken broth, heavy cream and xantham gum.
  • Bring to a boil and stir until thickened.
  • Serve inside your favorite crepe.
