  • Preheat the oven to 400F.
  • Squeeze as much liquid as possible out of the spinach and discard the liquid. I do this with my hands or with a thin cotton towel.
  • In a large bowl, combine the spinach, rotel and 2 cups of the cheese.
  • Pour the mixture into a 10 inch cast iron skillet or 8x8 casserole dish.
  • Flatten the top and cover with the remaining 1 cup of cheese.
  • Bake in the oven for 15 minutes or until the cheese is starting to brown and bubble.
  • Serve warm with pork rinds or vegetable sticks.
