Place the brie wheel on a parchment lined baking sheet and pre-heat the oven to 350F. Using a sharp knife, score the top of the brie in an criss-cross. Set aside.
Cut the onions in half from root to end and remove the outer skin. Cut in thin slices. Add the butter to a cast-iron skillet over medium-low heat. When the butter is melted, add the onions. When the onions are soft, but still white, add the thyme, salt, and ¾ of the Hormel Bacon Pieces. Let the onions slowly cook until they are soft and a rich caramel brown.
After you have added the seasonings to the onions, put your brie in the oven for 20 minutes to bake.
Remove from the oven, carefully place on a serving platter and top with the caramelized onions. Finish with remaining Hormel Bacon Pieces and serve with crackers.
