Ingredients

  • 2 Cooked chicken breasts, chopped
  • 2 Avocado, chopped
  • 1 Cup Celery, diced
  • 4 slices Cooked bacon, chopped
  • 1 Tablespoon Dried chives
  • 1 teaspoon Dried dill
  • 3 Tablespoons Lemon juice
  • 3 Tablespoons Olive oil
  • 1 teaspoon Kosher salt
  • ½ teaspoon Fresh cracked black pepper

Instructions

  • Add all of the ingredients to a large bowl and toss well to combine.  Serve with lettuce wraps or in a low carb tortilla.

Notes

This is best eaten the same day since the avocado will start to brown and soften. The lemon juice helps slow that down, but for the freshest texture, plan to eat it within 24 hours. If you want to make it ahead, mix everything except the avocado and add it right before serving.
