  • Measure out 2 cups of hot water into a liquid measuring cup and stir in both broth concentrates. Set aside.
  • Add the butter to a small sauce pan and heat over medium heat. Whisk in the Xanthan gum (this is a great way to keep your Xanthan gum from clumping together!) The Xanthan gum will melt into the butter.
  • Whisk the broth into the melted butter mixture. Bring to a boil, then reduce to low heat and let simmer for a couple minutes. Remove from the heat.
  • Season to taste. The gravy will thicken as it cools.

Notes

For the best texture, whisk the xanthan gum into the melted butter before adding the broth. This helps prevent clumping and creates a smooth gravy.
The gravy will continue to thicken as it cools. If it becomes too thick, whisk in a splash of broth or water until it reaches your desired consistency.
Start with the amount of xanthan gum listed in the recipe. Adding too much can result in a gummy texture.
Turkey drippings can replace some or all of the butter for a richer holiday-style gravy.
Store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat gently on the stovetop, adding a little broth if needed.
