Keto Fruit Pizza

This keto fruit pizza will be a perfect addition to those summer parties, bbq's, or pool gatherings. It is light and refreshing with a sugar free cookie crust, cream cheese frosting, and topped with fresh summer berries!

  • 12 inch metal pizza pan
  • Hand Mixer
  • parchment paper

Ingredients

Cookie Crust:

Icing:

Fruit:

  • 6-10 Strawberries, sliced
  • 3 ounces Blueberries
  • 3 ounces Raspberry

Instructions

Cookie crust:

  • Preheat the oven to 300F and line a 12 inch pizza pan with parchment paper. In a large mixing bowl combine the dry ingredients for the cookie crust. Now stir in the wet ingredients until completely combined.
  • Place cookie mixture onto the lined pizza pan. Take another piece of parchment paper and place it over your cookie mixture. Begin pressing the cookie dough all the way to the pizza pan edges. Remove the top parchment sheet and place cookie pizza in the oven and bake for 15 minutes. Set aside and let cool completely.

Icing:

  • In a medium size mixing bowl combine all of the ingredients for the icing using a hand mixer. Mix until the icing comes out creamy and smooth.

Assembly:

  • Spread the cream cheese icing evenly over the cooled cookie. Then take you strawberries, blueberries and raspberries and arrange how you like on top of the icing. Slice into 12 servings.

Notes

  • To cut this into 12 slices, cut first in half, then into quarters.  Then each quarter would be cut into thirds.
