This recipe takes taco night to the next level! These keto chicken Tinga tacos are huge on flavor, but low in carbs. You will love this juicy chicken with a simple zesty tomato sauce for your next keto taco Tuesday!
In a heavy bottom skillet, over medium, add in your avocado oil and chopped onion. Sauté onion until translucent, stirring occasionally, about 8 minutes.
Add in your minced garlic, chipotles, oregano and cumin, tomatoes, and salt. Bring to simmer and let cook for about 7 minutes. Add in your shredded chicken and cook for 5 minutes more. Taste for seasoning and adjust as needed.
To assemble your tacos, top tortilla with chicken mixture and garnish with avocado slices, cilantro, red onion and cotija. Squeeze fresh lime wedges over tacos and enjoy!
