    This recipe takes taco night to the next level! These keto chicken Tinga tacos are huge on flavor, but low in carbs. You will love this juicy chicken with a simple zesty tomato sauce for your next keto taco Tuesday!

    How amazing do these keto chicken Tinga tacos looks? They are super simple to make, really high in protein, and low in calories and carbs. Load them up with your favorite toppings or make a taco salad!

    I have so many amazing Mexican inspired recipes on the website. I am by no means a connoisseur of this type of cuisine, but I do know how to make it easy and low carb. I also know how to take myself to the local Mexican restaurant and indulge in some authentic cuisine! I hope you do the same every now and then, too.

    Ingredients needed

    1 Tablespoon avocado oil - any cooking oil will work!

    ½ Cup diced onion

    2 Cloves Garlic, minced

    1-2 Chipotle peppers in Adobo Sauce, finely diced - 1 for a little spice, more for even more spice!

    1 teaspoon dried oregano

    ½ teaspoon ground cumin

    ¾ Cup canned crushed fire-roasted tomatoes

    ½ teaspoon kosher salt

    3 Cups Cooked Chicken breast, shredded - a rotisserie chicken would do well here. You could also use my recipe for Instant Pot Chicken Breast.

    How to make keto chicken tinga tacos

    In a heavy bottom skillet, over medium, add in your avocado oil and chopped onion. Sauté onion until translucent, stirring occasionally, about 8 minutes. 

    Add in your minced garlic, chipotles, oregano and cumin, tomatoes, and salt. Bring to simmer and let cook for about 7 minutes. Add in your shredded chicken and cook for 5 minutes more. Taste for seasoning and adjust as needed.

    To assemble your tacos, top tortilla with chicken mixture and garnish with avocado slices, cilantro, red onion and cotija. Squeeze fresh lime wedges over tacos and enjoy!

    • 8-10 street taco low carb tortillas
    • Sliced avocado
    • chopped fresh cilantro
    • diced red onion
    • crumbled cotija cheese
    • Lime wedges
