Crockpot Keto Chicken and Gravy
With only 5 minutes of prep time, this keto chicken and gravy cooked in the crockpot is the perfect comforting dinner. Serve over cauliflower mash or green beans for a complete meal.

Ingredients
- 2 pounds boneless skinless chicken thighs, or breasts
- 2 cups hot water
- 1 tablespoon low sodium chicken broth concentrate
- 1 tablespoon low sodium beef broth concentrate
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon xanthan gum
- ¼ cup heavy cream
- salt and pepper to taste
Instructions
- Add the chicken to the bottom of the slow cooker. Dissolve both broth concentrates into the hot water and pour over top of the chicken. Season with the garlic powder and the onion powder.
- Place the lid and cook on high for 4 hours. Turn off the heat and sprinkle the xanthan gum over top. Use 2 forks or an electric mixer to carefully shred the chicken into the liquid. Stir in the heavy cream and season with salt and pepper to taste.

I wanted to do this recipe as it was different to the chicken dishes I normally cook.
I was going to make it with rice on the side.
Instead I put lots of veg in it which ticks a very big box as I struggle with veg.
Then I just left out the cream.
I ended up with more of a chicken casserole which I don’t normally like either.
Normally I’m a beef man so glad I had a go at this as it is really nice.
I ever worried about the two different stocks but the flavour of this dish is really nice.
I have already pinned it in to my Pinterest turn to chicken boards.

Just made this for dinner, it's delicious! I had to test before the rest of my meal is done cooking in the oven! It was super simple, and I love that it's a gravy dish, but it's not dairy heavy like a typical low carb gravy dish is (lots of cream cheese, sour cream, etc).
