Meatballs are such an underrated dinner, in my opinion. These garlic butter meatballs are so full of flavor and very simple to make.

You may think that making meatballs are time consuming, but it really is a simple process and baking them in the oven really makes them go more quickly. I like to scoop these garlic butter meatballs using a kitchen scoop to make the process even easier!
How to make garlic butter chicken meatballs

First we mix all of our meatball ingredients in a large bowl. I use a fork to keep from overworking the meatball mixture.

Second I scoop the mixture out onto a lined sheet pan using a food disher to make 12 meatballs.

Roll each portion onto a tight ball and place evenly on the sheet pan. Bake in a 400F oven for about 20 minutes.

While the meatballs are baking, I make the garlic butter sauce. Melt the butter in a small saucepan over medium low heat, being careful to not let it simmer. Remove from the heat and stir in the lemon juice and grate the garlic into the sauce.

Finally we spoon the garlic butter sauce over the meatballs and serve.

Garlic Butter Chicken Meatballs

Ingredients
- 1 lb Ground chicken
- ½ cup Grated parmesan cheese, powder kind
- ½ teaspoon Kosher salt
- ¼ teaspoon Black pepper
- 2 Cloves garlic, minced
- ⅓ bunch Parsley, finely chopped (yield ½ cup)
- 2 tablespoon Olive oil
- 6 tablespoon Butter
- 1 tablespoon Lemon juice
- 2 Cloves garlic, grated
Instructions
- Preheat the oven to 400F and line a baking sheet with parchment paper.
- In a large bowl, combine the ground chicken, parmesan, salt and pepper, minced garlic, chopped parsley, and olive oil. Use a food disher to divide the mixture into 12 portions and place on the baking sheet evenly. Roll into balls. Bake in the oven for 20 minutes.
- Melt the butter in a small saucepan over medium low heat, being sure not to let it simmer. Stir in the grated garlic and lemon juice. Remove from the heat and season with salt and pepper to taste.
- Serve the meatballs topped with the sauce.

Really easy to make and nobody complained (which hardly ever happens lol) I put mine in the air fryer instead of oven and they were great!

I made these tonight. It was 103 today, and I had zero desire to turn on the oven. I sautéed them on the stove in olive oil, then served with the melted butter.

Not a fan of chicken but trying to expand my palate. This recipe will be made again and again. Made an accident when purchasing 1 pound of ground chicken and bought 2 pounds LOL.Doubled the recipe since no other plans for the remaining chicken. Hope they freeze ok for use later. Mmmm garlic aroma has filled my home.
