- 1 lb Ground chicken
- ½ cup Grated parmesan cheese powder kind
- ½ teaspoon Kosher salt
- ¼ teaspoon Black pepper
- 2 Cloves garlic minced
- ⅓ bunch Parsley finely chopped (yield ½ cup)
- 2 tablespoon Olive oil
- 6 tablespoon Butter
- 1 tablespoon Lemon juice
- 2 Cloves garlic grated
Preheat the oven to 400F and line a baking sheet with parchment paper.
In a large bowl, combine the ground chicken, parmesan, salt and pepper, minced garlic, chopped parsley, and olive oil. Use a food disher to divide the mixture into 12 portions and place on the baking sheet evenly. Roll into balls. Bake in the oven for 20 minutes.
Melt the butter in a small saucepan over medium low heat, being sure not to let it simmer. Stir in the grated garlic and lemon juice. Remove from the heat and season with salt and pepper to taste.
Serve the meatballs topped with the sauce.
