Rustic Avocado Salad and Caprese Chicken

Ingredients

  • 4 thin chicken breasts (about 4 ounces each)
  • 1 ½ Cups your favorite balsamic dressing, divided
  • 4 Ounces Mozzarella pearls
  • 1 Whole Avocado, sliced
  • 1 Cup cherry tomatoes, cut in half
  • Spinach or Green Leaf Lettuce
  • Salt and pepper to taste

Instructions

  • Place your chicken breast in a medium size bowl, then add ½ cup of your balsamic dressing. Coat both sides of the chicken and set aside to let your chicken marinate for about 30 minutes.
  • Once your chicken finishes marinating, add chicken to your air fryer and cook for 15 minutes at 400F or until an internal temperature thermometer reaches 165F. Alternatively you can cook the chicken in a non-stick skillet over medium heat until cooked through. Remove from the pan to a cutting board and slice into strips.
  • Build each salad with a couple handfuls of greens followed by cherry tomatoes, mozzarella pearls, sliced avocado and sliced chicken breast. Lastly, top your salad with the remaining balsamic dressing. Season your salad with salt and pepper if desired. Serve and enjoy!
