My love for salad continues with this over-the-top flavorful Rustic Avocado Salad and Caprese Chicken. You'll love the simplicity of this 6 ingredient lunch or dinner!

What better way to get a nice serving of protein, vegetables, and fats than to eat a nice big salad! I am a huge lover of salads, so much so that I eat one just about every day. Sometimes they can be time consuming to make. but not this one! It's only 6 ingredients!
Ingredients needed

4 thin chicken breasts (about 4 ounces each) - You can buy chicken breast cutlets or you can slice a whole chicken breast in half lengthwise. This helps the chicken cook faster and more evenly.
1 ½ Cups your favorite balsamic dressing, divided - There are so many balsamic dressings out there and so many recipes! They are all pretty similar in that they are a combination of balsamic vinegar and oil.
4 Ounces Mozzarella pearls - I love the convenience of these mozzarella pearls. If you have trouble finding them, a fresh mozzarella ball cut into slices will work.
1 Whole Avocado, sliced
1 Cup cherry tomatoes, cut in half
Spinach or Green Leaf Lettuce - you can use any greens you like for this recipe. Shredded romaine, arugula, spinach, etc.
How to make Rustic avocado salad and caprese chicken
This section explains how to make this rustic caprese chicken salad recipe, step by step. For a full printable recipe, see the recipe card below.
Place your thin chicken breast in a medium size bowl, then add ½ cup of your balsamic dressing. Coat both sides of the chicken and set aside to let your chicken marinate for about 30 minutes.
Once your chicken finishes marinating, add chicken to your air fryer and cook for 15 minutes at 400F or until an internal temperature thermometer reaches 165F. Alternatively you can cook the chicken in a non-stick skillet over medium heat until cooked through. Remove from the pan to a cutting board and slice into strips.
Build each salad with a couple handfuls of greens followed by cherry tomatoes, mozzarella pearls, sliced avocado and sliced chicken breast. Lastly, top your salad with the remaining balsamic dressing. Season your salad with salt and pepper if desired. Serve and enjoy!
