Equipment

  • high-speed blender

Ingredients

  • 2 ripe avocados, peeled and seeds removed
  • ½ cup packed fresh cilantro
  • ½ cup Mexican crema or sour cream
  • ½ cup water
  • ½ teaspoon Kosher salt
  • juice of 1 lime
  • ⅛ teaspoon cayenne
  • ¼ teaspoon ground coriander

Instructions

  • Add the avocados, cilantro, Mexican crema or sour cream, water, lime juice, salt, cayenne, and coriander to a blender or food processor.
  • Blend until smooth and creamy, stopping to scrape down the sides as needed.
  • For a thinner dressing, blend in more water, 1 tablespoon at a time, until it reaches your desired consistency.
  • Taste for salt and add more if needed.

Notes

  • Avocados: Use ripe avocados that give slightly when gently pressed for the smoothest dressing.
  • Thickness: For a dip or spread, start with less water. Add more as needed to help it blend.
  • Substitution: Plain Greek yogurt can replace the sour cream or Mexican crema for a tangier dressing that is higher in protein.
  • Storage: Refrigerate in an airtight container for up to 3 days. Press plastic wrap directly against the surface to help slow browning.
  • Before serving: Stir well and add a splash of water if the dressing has thickened in the fridge.
