When you have 2 avocados sitting in your fridge and they are perfectly ripe and you know that they will be over-ripe if you don’t use them this very minutes…you make Low Carb Salad Dressing.

This avocado cilantro lime dressing has the perfect amount of zip, zing, pow, and wow.  It lights up my tastebuds and I want to put it on all of my low carb salads for the rest of my life.

How would it feel to start losing with keto?

Now lets get one thing straight.  I love cilantro.  I could just eat the leaves by themselves because I love it so much.  Now I know that some people hate cilantro as much as I love it…and for those people, you might want to go to the next recipe.  Peace out cilantro hating friends.  Until next time.

I love this low carb salad dressing so much, I make it about once every 2 weeks.  I love it on my Keto Salad, a topping for my Instant Pot Whole Chicken, or in a Mason Jar Salad!

This low carb dressing is easily adaptable as a spread or a dip.  Just cut back on the water a bit to make it a little thicker.  I can see this on eggs, burgers, grilled chicken…OMG my mouth is watering because I want to put this on ALL THE THINGS.

What I love about this avocado cilantro lime dressing is you just dump all of the ingredients into a food processor and blend away.  No drizzling a drop of oil at a time until you have the right consistency.  Ain’t nobody got time for that!

Do you put in the cilantro stems and all or do you pick the leaves off first?

I don’t worry about the small stems but I remove the thicker pieces of stem
