Cinnamon Sugar Sourdough Bread Recipe

Every week I make 2 loaves of sourdough bread and this cinnamon sugar version is my family's favorite.

  • We start by making our sourdough just like any other loaf. My Sourdough Bread Recipe for beginners is a great way to start. Once you have your dough all ready for shaping, it is time to add the cinnamon and sugar.
  • Stretch the dough into a rough rectangle, but not too thin. You want to keep it about an inch thick. Sprinkle a generous amount of powdered cinnamon, followed by sugar, but keep it away from the sides. I use regular table sugar for this recipe. I find that brown sugar doesn't work as well.
  • Fold the dough in on itself into thirds, adding more cinnamon and sugar as you go. The final layer of cinnamon and sugar goes on top of the folded dough. Roll the dough into a ball, pinching the sides as you go.
  • Form tension in your dough ball. Use your hands to push the dough away from you, then pull it towards you in a candy cane shape motion. Do this several times, until the dough is taught on top.
  • Add the dough ball to our banneton basket (smooth side down), sprinkle with a little flour, and cover with a piece of plastic wrap - just like with any other sourdough. Let it refrigerate overnight to develop that distinct sourdough flavor.
  • In the morning, preheat your oven to 450F with your dutch oven inside. I like to have a sheet pan on the rack under my dutch oven to keep the bottom of my bread from getting too dark.
  • Turn your dough out onto a piece of parchment paper or a silicone sling made for baking sourdough. Score with a bread lame so your bread can expand in the oven without tearing.
    Bake in the dutch oven, with the lid on, for 35 minutes. Remove the lid and bake for 5 minutes more. Remove the dutch oven from the oven and then remove the bread from the dutch oven to let completely cool before slicing.
