Crunchy Keto Granola Recipe (Low Carb Granola with Only 2g Net Carbs)

  • Preheat oven to 375F (190C) and line an 18x13 inch (46cm x 33cm) rimmed sheet pan with a silicone baking mat or parchment paper.
  • Mix all ingredients in a large bowl and spread in an even layer on the prepared baking sheet.
  • Bake for 8-10 minutes or until desired crunch is achieved. Keep an eye on this while it is baking as the granola can go from perfectly cooked to burned really quickly.
  • Taste and adjust sweetness and saltiness as desired.

Notes

For larger granola clusters, gently press the mixture together on the baking sheet before baking and allow it to cool completely before breaking it apart.
This recipe is very flexible. Feel free to swap the walnuts, pecans, or almonds for your favorite nuts. You can also add pumpkin seeds, sunflower seeds, flax seeds, hemp hearts, or unsweetened coconut flakes.
Store the cooled granola in an airtight container at room temperature for up to 2 weeks. For longer storage, freeze for up to 3 months and thaw at room temperature before serving.
