Ingredients

For the Burgers

  • 1 lb Ground beef I used 90% lean
  • 1 tablespoon Olive Oil
  • 1 tablespoon Dijon Mustard
  • 1 Teaspoon Kosher Salt

For the Smoked Paprika Aioli

  • ½ Cup Mayonnaise
  • 1 tablespoon Lime Juice
  • ¾ teaspoon Cumin
  • ½ teaspoon granulated garlic
  • 1 teaspoon Smoked Paprika
  • Pinch of Kosher Salt

For Assembling the Bowls

  • 5 oz Baby Spinach
  • 1 Avocado , peeled, seed removed, and sliced
  • 5 oz Grape Tomatoes , sliced in halve
  • ¼ cup Blue Cheese crumbles
  • Kosher salt and pepper to taste
  • 1 teaspoon Red pepper flake

Instructions

  • Combine burger ingredients in a medium bowl being careful not to overwork the meat
  • shape into 4 burger patties and cook in a heavy bottom skillet until desired doneness
  • While Burgers are cooking combine all Aioli ingredients in a small bowl
  • To Assemble bowls: divide spinach into 4 bowls, top with ¼ sliced avocado, ¼ tomatoes, ¼ blue cheese, and burger. Dollop a spoonful of aioli on the burger.
  • season each bowl with salt and pepper, and red pepper flake

Notes

  • Burger tips: Mix the beef just until combined, and avoid pressing down on the patties while they cook. This helps keep them juicy.
  • Easy swaps: Use romaine or mixed greens instead of spinach. Swap the blue cheese for cheddar, feta, or goat cheese.
  • Paprika sauce: Use smoked paprika for the smoky flavor. Regular paprika will work, but the sauce will taste different.
  • Meal prep: Store the burgers, sauce, greens, and toppings separately. Slice the avocado and build the bowls just before serving.
  • Storage: Refrigerate cooked burgers and sauce in separate airtight containers for up to 4 days. Reheat only the burger before adding it to the bowl.
  • Gluten-free: Check ingredient labels to confirm they are gluten-free.
