Keto Iced lemon Cookies

Lemon cream cheese icing
- ⅓ cup powdered sweetener
- 2 ounces softened cream cheese
- 1 tablespoon fresh squeezed lemon juice
- ½ teaspoon vanilla extract
Preheat the oven to 350F (180C) and line a cookie sheet with parchment paper or a silicone baking mat.
In a large mixing bowl combine the almond flour, powdered sweetener, baking soda, salt, and lemon zest. Add the softened butter and vanilla extract and use an electric mixer to combine until all of the almond flour is mixed into the butter.
Use a 2-tablespoon cookie scoop or a spoon to divide the batter into 9 cookies and flatten out the tops. Bake for 12 minutes or until the edges turn golden brown. Let cool for 10 minutes on the baking sheet before icing.
While the cookies are baking, make the icing. Combine all icing ingredients in a medium sized mixing bowl and beat with an electric mixer until fully combined.
Spread the icing over each cookie before serving.
