Keto Iced lemon Cookies
These melt in your mouth keto lemon cookies with lemon cream cheese icing are the perfect easy treat. The lemon flavor is so refreshing, especially with fresh-squeezed lemon juice!

Ingredients
- 1 ½ cups almond flour (see my favorite on Amazon)
- ⅓ cup sugar free powdered sweetener
- ¼ teaspoon baking soda
- pinch of kosher salt
- Zest of one lemon
- ½ cup softened butter
- 1 teaspoon vanilla extract
Lemon cream cheese icing
- ⅓ cup powdered sweetener
- 2 ounces softened cream cheese
- 1 tablespoon fresh squeezed lemon juice
- ½ teaspoon vanilla extract
Instructions
- Preheat the oven to 350F (180C) and line a cookie sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl combine the almond flour, powdered sweetener, baking soda, salt, and lemon zest. Add the softened butter and vanilla extract and use an electric mixer to combine until all of the almond flour is mixed into the butter.
- Use a 2-tablespoon cookie scoop or a spoon to divide the batter into 9 cookies and flatten out the tops. Bake for 12 minutes or until the edges turn golden brown. Let cool for 10 minutes on the baking sheet before icing.
- While the cookies are baking, make the icing. Combine all icing ingredients in a medium sized mixing bowl and beat with an electric mixer until fully combined.
- Spread the icing over each cookie before serving.

Your ingredients list only shows vanilla extract for the icing yet step 2 shows to add the softened butter and vanilla extract to the dry batter ingredients. Which is it - it goes in with the butter or in the icing?

Sorry about that. There is 1 teaspoon of vanilla extract in the cookie batter.

300 calories are a lot for one cookie. I am reducing my cookie size to just one tablespoon to cut back on the calories. Keto can definitely help you lose weight, but you also have to make sure you aren't eating nothing but high calorie foods. I typically don't count my calories when doing low carb, but with one cookie being 300 calories, it's best for me to eat smaller cookies so I can reach my goal weight. This will also allow me to get 18 cookies instead of 9. It's not worth my time to make just 9 cookies. I want to get the most out of my time when baking.
