    Ingredients

    • 1 tablespoon butter
    • 3 tablespoons almond flour (see my favorite on Amazon)
    • 2 tablespoons sugar free granulated sweetener (see my favorite on Amazon)
    • 1 large egg, beaten
    • ½ teaspoon baking powder
    • ½ teaspoon cinnamon
    • Splash of vanilla extract

    Instructions

    • In a microwave-safe mug or ramekin, microwave the butter for 10 seconds to melt it. Swirl the butter around the inside of the mug to grease the sides. (leave the remaining butter as it is part of the batter.)
    • Add the almond flour, sweetener, egg, baking powder, cinnamon, and vanilla. Whisk well until combined.
    • Microwave on high for 60 seconds. Let stand in the microwave for 1 minute before removing. If you like, invert the cake onto a plate or enjoy it right in the mug. Sprinkle with extra cinnamon and powdered sweetener for garnish, if desired.
