Keto Snickerdoodle Mug Cake
Ingredients
- 1 tablespoon butter
- 3 tablespoons almond flour (click to see my favorite)
- 2 tablespoons sugar free granulated sweetener (click to see my favorite)
- 1 large egg, beaten
- ½ teaspoon baking powder
- ½ teaspoon cinnamon
- Splash of vanilla extract
Method
- In a microwave-safe mug or ramekin, microwave the butter for 10 seconds to melt it. Swirl the butter around the inside of the mug to grease the sides. (leave the remaining butter as it is part of the batter.)
- Add the almond flour, sweetener, egg, baking powder, cinnamon, and vanilla. Whisk well until combined.
- Microwave on high for 60 seconds. Let stand in the microwave for 1 minute before removing. If you like, invert the cake onto a plate or enjoy it right in the mug. Sprinkle with extra cinnamon and powdered sweetener for garnish, if desired.

I’m curious about the carb count, when I put it in my net diary, it came out a lot more carbs using 2 tablespoons of the monk fruit sweetener. I have the same type that you recommended. Please advise.

Monk fruit sweetener should be zero carbs.

Well, I am apparently missing something, the link for the type you like, shows 8 carbs per two teaspoons. Can you post a picture of your bag nutrition facts because I’m apparently not looking at this correctly. I would desperately like to find the monk fruit you show as zero carbs. I even went to the store and looked at every bag and it all showed 7-8 carbs per 2 tsp.

Those carbohydrates are sugar alcohols and are not included because our body does not process it.

Loved it, however when I put it in MyNetDiary it showed the carb count way higher. I used the exact same sweetener but with 2 tablespoons it showed carbs at 29 grams. Please advise
