- 8 large Eggs
- ½ Cup heavy cream
- ½ teaspoon Kosher salt
- ¼ teaspoon black pepper
- 2 Cups shredded Monterey Jack cheese
- 8 slices Bacon, cooked and crumbled
In a large mixing bowl or blender, combine the eggs, heavy cream, salt and pepper. Blend or whisk until smooth.
Spray the egg bite molds with cooking spray and equally divide the cheese and bacon between the 14 egg cups. Pour the egg mixture evenly between the cups.
Spray 2 sheets of foil with cooking spray and cover the egg bites tightly with the foil. Set on the metal trivet. Pour 1 cup of water in the Instant Pot and set the trivet with the egg bites in the Instant pot.
Set on steam for 10 minutes followed by a 10 minute natural pressure release. Use a quick release to let the rest of the pressure out. Let cool and serve. Store in air-tight container in the refrigerator for up to 4 days.
- Use foil instead or the lids that come with the egg bite molds
- Blend the eggs in a blender for super smooth texture
- Spray the foil with cooking spray so it doesn't stick to the bites
