Keto blueberry quick bread came out so tasty. I picked fresh blueberries and baked this recipe today. It’s filling and came out delicious. I did cook it 9 minutes less than the stated time and my oven is accurate. It was a golden brown and cooked all the way through. Thanks for the recipe!
Love your recipes
Jennifer, I love your recipes. I am concerned about the latest bad news on erithritol. It is in the monkfruit and many other blends of sweetner.
I would like to know your thoughts. Thank you,
Dianne
I am not concerned but if you feel more comfortable, you could use allulose.
Sounds delicious but I feel that’s a lot of carbs for one piece of bread. I do love your recipes!
That’s the nature of blueberries.
Love the recipe added 1/2 a cup of blueberries instead of the 1 cup to lower carbs. Love it not too sweet
This is oh so delicious!!! Thank you, Jennifer❣️
I am going to try this recipe for my husband he loves blueberries. It sounds delicious.
Pretty tasty as far as a keto bread goes. I love the almond/blueberry flavor. T My only complaint is that I had to bake it for about 60 minutes. The toothpick never came out clean but I was afraid of burning the top so I took it out. Not sure what happened as my oven is always very accurate. So it wasn’t perfectly baked and I can’t really slice it, but taste is what matters.
Jennifer, I just made this… stupidly with frozen blueberries, but that dit not matter so much…. simply delicious…. with a dust of Icing sugar above…. yammie…. Thank you for this… I am from Holland and I buy my almond flour at Pit & Pit.nl
What is a good almond flour…I seem to have trouble with making bread or anything else with almond flour…
Blue Diamond is my favorite
Can I use a 6 well muffin tin? What temp and how long? Thank you!
Yes but I do not know how long. Never tried it
I cooked in a 6 muffin pan for 40 min and it was so good.
Can I use coconut flour instead of almond flour?
No, coconut flour doesn’t work as it is too absorbent

A question about the keto blueberry quick bread: can frozen berries be used?
I can’t wait to try this bread?
Yep! I have actually used frozen with no problems.
You have such delicious and easy recipes!!

I struggle with keto bakes so much as most use almond flour and hubby is allergic to nuts :(. Sunflower Seed flour gives a completely different taste as an exact replacement. Do you have any suggestions?
