
Hey there, I'm Jennifer Banz!
I'm a recipe creator, cookbook author, fitness enthusiast, and mom of two from Central Arkansas. For the past 13+ years, I've been creating easy low carb and high protein recipes that actually fit into real life.
Low Carb with Jennifer started in 2016 after years of experimenting in the kitchen and learning how to make simple meals that helped me lose over 100 pounds and keep it off. At the time, I was frustrated with complicated recipes that used hard-to-find ingredients or required cooking separate meals for my family. I wanted to create food that felt realistic, approachable, and satisfying.
Today, my website has grown into a community of over 1 million followers with more than 550 recipes, including reader favorites like my Air Fryer Chicken Thighs with hundreds of 5-star reviews.
In 2022, I published my first cookbook, Live Life Keto, featuring over 100 simple keto recipes. It was named an Amazon Editors' Pick shortly after release, which was a huge honor. You can find my cookbook here:

Over the years, my recipes and work have been featured in publications such as Buzzfeed, Tasty, Health.com, Southern Living, Prevention, Women's Health, Parade, Huffington Post, Chowhound, and more.
But these days, my life and my mission have expanded beyond just recipes.

After losing weight and changing my lifestyle, I discovered strength training and running in my 40s. What started as simply trying to get healthier turned into something much bigger. I now share my journey of building strength, training for the NYC Marathon, and learning how to fuel my body with simple, high protein meals.
One of the biggest things I want women to understand is that you are not too old to start.
A year ago, there were workouts I couldn't do and runs I couldn't finish. I share my journey online not to impress anyone, but to show what's possible when you stop waiting for perfect motivation and start focusing on small, repeatable habits.
That philosophy is also what inspired my membership program, where I help women simplify healthy eating and fitness with:

- Real-life strategies for consistency
- Support for women who feel overwhelmed by starting
I truly believe you do not need to completely overhaul your life to feel better. You just need simple systems you can repeat, even during busy seasons of life.

When I'm not cooking, filming recipes, lifting weights, or training for a race, I'm at home in Arkansas with my husband Matt, our two kids Hayden and Audrey, and our two tri-color corgis, Rebel and Rowdy. As you can imagine, life around here is usually loud, messy, and full of chaos...but that's exactly why I believe healthy living has to work in the real world.
