It is good to pat the salt and pepper into the short ribs so it really takes in the flavor, then place each piece into the crockpot.

- 1 tablespoon minced garlic
- 1/2 onion, chopped
- 1 teaspoon thyme
- 28 ounces fire roasted diced tomatoes
