    Tortilla Pizza - Low Carb!

    Sometimes you want pizza in a hurry...and you're trying to stay healthy! This tortilla pizza gives you all of the flavors of pizza without all the work or calories. It is kid friendly too!

    Of course, there is nothing wrong with having a couple of pieces of real pizza from a pizza place or even homemade. But I like to have pizza more often than that, so I love making these tortilla pizzas when a craving hits. To make them low carb friendly, all you have to do is use low carb tortillas!

    This recipe is so simple, you really can't even call it a recipe. More like a tutorial for a tortilla pizza. The combination possibilities are endless for this so feel free to make it your own.

    Ingredients

    This section explains how to choose the best ingredients for this tortilla pizza recipe, what each one does in the recipe, and substitution options. For a printable recipe, see the recipe card below.

    1, 8 to 10 inch flour tortilla per person - I like to use a burrito size low carb wrap to make this tortilla pizza low carb. You could also use gluten free tortillas for a gluten free version.

    ¼ cup pizza sauce - Your favorite pizza sauce is all you need here. But if you like to be adventurous, you could use olive oil, ranch dressing, Alfredo sauce, buffalo sauce, arrabbiata (spicy red sauce), or pesto.

    ½ cup shredded mozzarella cheese - Or your favorite cheese for pizza. A little parmesan cheese would be great!

    Your favorite pizza toppings - I like to use mini pepperoni on mine but you could use whatever you like! Shredded chicken, sausage, hamburger, and all kinds of veggies work. Herbs like fresh basil are great too!

    Pro tip:

    • Since the tortillas are so thin, you may want to keep the toppings light or the weight from them could weigh down the pizza when you go to pick it up.

    How to make tortilla pizza

    Pre-heat the oven to 425F. Prepare the pizza by placing the tortilla on a work surface. Spread the sauce on top, then sprinkle the cheese. finish with the toppings of choice.

    For the crispiest tortilla pizza crust, bake it directly on the oven rack for 5 minutes or until the crust is to your liking.

    I know a lot of people do not like the idea of placing a flimsy tortilla directly on an oven rack. You can bake this on a baking sheet pan but it may not come out as crispy.

    Slice the tortilla pizza with a pizza cutter and serve.

    Jennifer's tips

    Nutrition was calculated using an 80 calorie La Banderita Carb Lean Tortilla, ¼ cup Raos Pizza sauce, and ½ cup shredded mozzarella cheese.
    Use of a different tortilla could lower the carb count as most of the carbs are coming from the tortilla.  
    This recipe can also be made in an Air Fryer or toaster oven.  You would follow the same cooking directions as above.  If your air fryer doesn't go up to 425F, use the highest temperature of your air fryer.

      I have found browning two smaller tortillas in a fry pan and gluing them together with cheese and then following up with toppings makes for a crispy pizza.
