    Crispy Personal Tortilla Pizza

    This tortilla pizza recipe gives you all of the flavors of pizza without all the work or calories. Pile on your favorite toppings for an easy pizza night.

    Of course, there is nothing wrong with having a couple of pieces of real pizza from a pizza place or even homemade. But I like to have pizza more often than that, so I love making these tortilla pizzas with low carb flour tortillas when a craving hits.

    This recipe is so simple, you really can't even call it a recipe. It's more like a tutorial for a tortilla pizza. The best part is the whole family will want to chip in and make their own pizzas!

    How to make easy tortilla pizzas

    Pre-heat the oven to 425F. Prepare the pizza by placing the tortilla on a work surface. Spread the tomato sauce on top, then sprinkle the cheese. finish with the toppings of choice.

    Topping ideas include: ground beef, red onion, black olives, bbq chicken and bbq sauce, Italian sausage, and green bell peppers. I would skip fresh mozzarella because it has so much moisture.

    For the crispiest tortilla pizza crust, bake the pizza directly in a large cast iron skillet.

    Slice the tortilla pizza with a pizza cutter and serve.

    For the easiest thin crust pizza, give this tortilla pizza a try! It uses simple ingredients you probably have ready to go in your pantry. It is a great way to feed that pizza craving!

    Ingredients

    • 1 8-10 inch Flour tortilla (use a low carb option if wanting a low carb pizza)
    • ¼ cup pizza sauce
    • ½ cup shredded mozzarella cheese
    • pizza toppings of choice

    Method

    1. Pre-heat the oven to 425F. Prepare the pizza by placing the tortilla on a work surface. Spread the sauce on top, then sprinkle the cheese. finish with the toppings of choice. Alternatively, prepare the pizza directly in a large cast iron skillet.
    2. For the crispiest tortilla pizza crust, Heat the skillet on the stovetop over medium high heat and crisp the bottom of the tortilla for a few minutes, then transfer to the preheated oven to brown the toppings.
    3. If you do not have an oven safe skillet, you can place the tortilla pizza directly on the oven rack, or on a baking sheet to bake.
    4. Slice the tortilla pizza with a pizza cutter and serve.

    Notes

    Nutrition was calculated using an 80 calorie La Banderita Carb Lean Tortilla, ¼ cup Raos Pizza sauce, and ½ cup shredded mozzarella cheese.
    Use of a different tortilla could lower the carb count as most of the carbs are coming from the tortilla.  
    This recipe can also be made in an Air Fryer or toaster oven.  You would follow the same cooking directions as above.  If your air fryer doesn't go up to 425F, use the highest temperature of your air fryer.

      I have found browning two smaller tortillas in a fry pan and gluing them together with cheese and then following up with toppings makes for a crispy pizza.
