This Crustless Pizza Recipe provides the pizza flavor we all love with almost zero carbs! This easy, no crust pizza is a great option for a busy weeknight or the ultimate meal prep. ย Pizza night doesn't have to take a lot of time in the kitchen...30 minutes is all you need!

taking a piece from crustless pizza

Crustless pizza recipes have become increasingly more and more popular with the rise of the keto diet. ย Let's face it, what we really like about pizza is the toppings! ย I've noticed pizza chains have started introducing this type of pizza on their menu for those following a low carb diet. ย With this easy recipe, you can skip the expensive takeout!

This recipe is completely customizable with different meats and vegetables. ย You can really make this no crust pizza your own. ย I like to pile on the veggies for more of a supreme pizza flavor, but you could also make this a meat lover's pizza.

    Ingredients needed

This section explains how to choose the best ingredients for this crustless pizza recipe, what each one does in the recipe, and substitution options. For the printable recipe, see the recipe card below.

1 pound ground sausage - I like to use ground breakfast sausage because that's what I usually have on hand. ย You may want to use ground Italian sausage for a more traditional pizza flavor. Any ground meat will work.ย

1 cup jarred marinara sauce - You can use whatever jarred no added sugar marinara sauce you prefer, or you could make a homemade keto marinara sauce. Of course, pizza sauce will work as well...just make sure it is sugar free.

2 cups shredded mozzarella cheese, divided - we are using 1 cup of shredded mozzarella in the base and then the other cup for the topping.

Your favorite pizza toppings: I like green peppers, mushrooms, pepperoni slices, and black olives.

    How to make crustless pizza

This section explains how to make this no crust pizza recipe step by step. For a full printable recipe, see the recipe card below.

Step 1 - Preheat the oven to 400F (200C). ย In a heavy bottom skillet over medium high heat, cook and crumble the sausage. Drain any excess fat. Stir in 1 cup of the mozzarella and flatten the cooked sausage and cheese mixture into a single layer.

meat and cheese in the bottom of a skillet

Step 2 - Spoon the marinara sauce on top of the meat and cheese and spread with a spoon. layer your favorite toppings and shredded cheese on top.ย

    adding toppings to crustless pizza

Step 3 - Place in already preheated oven and bake for 20 minutes or until the cheese melts and is golden brown around the edges. Makes 4 servings.

adding black olives to no crust pizza

Tips for the best no crust pizza

    • For an almost carb free pizza -ย omit the marinara sauce and use only meat and cheese for toppings.
    • If you do not have an oven safe skillet -ย If you do not have a skillet that can go from stovetop to oven, you can sautรฉ the sausage in a skillet and then transfer it to a 9x9 baking dish.

    Crustless pizza storage instructions

Store:ย place any leftovers in an airtight container and refrigerate for up to 4 days.

Meal Prep: Let the crustless pizza cool completely and then transfer into 4 separate meal prep containers, divided evenly.

I made this using Italian sausage with mozzarella as the base. Added the sauce, mozzarella and fresh Parmesan cheese, pepperoni, cut up ham lunch meat, canned artichokes and black olives. Delicious!! My husband said that recipe was a keeper and told me it was the best pizza I ever made!! Thanks, Jennifer!!

Love this recipe! I make it a lot, though have forgotten the sauce a few times and it is still yummy! I sometimes add Canadian bacon and less pepperoni to cut some of the fat.

This looks great. My husband loves pizza, he has type 2 diabetes. My problem is, he doesn't like vegetables. The only ones he likes are green beans, lettuce, cucumber, corn, carrots and green peas. I know carrots, corn and green peas are not ok on keto. Any suggestions. He will eat olives.

My partner did not eat veggies either when we got together so I slowly introduced him to roasted potatoes then roasted potatoes and carrots then slowly added in Brussels sprouts with bacon and Parmesan and just kept adding them always with bacon crumbles. I made Cobb salads that he loves. It's tricky getting them to eat veggies. He now eats everything I make keto. He still likes his potatoes noodles and sugar though. I'm working on that. This has taken about 5 years. It won't happen overnight.
