This Crustless Pizza Recipe takes the pizza flavor you love with almost zero carbs! This easy, no crust pizza is perfect for busy work days or the ultimate meal prep. Family dinner doesn't have to take a lot of time in the kitchen...30 minutes is all you need!

Crustless pizza recipes have become increasingly more and more popular with the rise of the keto diet. Let's face it, what we really like about pizza is the toppings! I've noticed pizza chains have started introducing this type of pizza on their menu for carb conscious patrons. That is a very smart business move since keto is not going anywhere anytime soon.
This recipe is completely customizable with different meat and vegetables. You can really make this no crust pizza your own. I like to pile on the veggies for more of a supreme pizza flavor, but you could also make this a meat lovers version.
Ingredients needed

1 pound ground breakfast sausage - I like to use breakfast sausage because that's what I usually have on hand. You may want to use ground Italian sausage for a more traditional pizza flavor. If you buy Italian sausage links, you would need to remove the casings.
1 cup jarred marinara sauce - You can use whatever jarred marinara sauce you prefer, or you could make a homemade keto marinara sauce.
2 cups shredded mozzarella cheese, divided - we are using 1 cup of shredded mozzarella in the base and then the other cup for the topping.
½ green bell pepper, sliced - feel free to use whatever vegetables you want for this crustless pizza, or none at all! You really can have whatever toppings you like.
4 ounces mushrooms, sliced - I like to use baby Bella mushrooms which are small brown mushrooms. You could also use white button mushrooms.
Turkey pepperoni, sliced - I like to use turkey pepperoni because this recipe is already so heavy. You can use traditional sliced pepperoni if you like.
¼ cup sliced black olives - I love sliced black olives on any pizza, but especially this no crust pizza.
How to make crustless pizza

Step 1 - Preheat the oven to 400F. In a heavy bottom skillet over medium high heat cook and crumble the sausage. Drain any excess fat. Stir in 1 cup of the mozzarella and flatten the meat and cheese mixture into a single layer.
Step 2 - Spoon the marinara sauce on top of the meat and cheese and spread with a spoon. layer your sliced bell peppers and sliced mushrooms.
Step 3 - Layer the pepperoni and black olives. Place in already preheated oven and bake for 20 minutes or until cheese is melted and brown around the edges. Makes 4 servings.
Tips for the best no crust pizza
- For an almost zero carb pizza - omit the marinara sauce and use only meat and cheese of toppings.
- If you do not have an oven safe skillet - If you do not have a skillet that can go from stovetop to oven, you can sauté the sausage in a skillet and then transfer it to a 9x9 casserole dish.
Crustless pizza storage instructions
Store: place any leftover in an airtight container and refrigerate for up to 4 days.
Meal Prep: Let the crustless pizza cool completely and then transfer into 4 separate meal prep containers, divided evenly.
Tools to make this recipe easier
- Oven safe skillet - this is the one I use and I know it is pricey, but there are others that are much cheaper and work just as well.
- Meat chopper - This little kitchen too is well worth the drawer space it takes up. it really makes cooking and crumbling ground meats so much easier.

Ingredients

- To meal prep this, when finished cooking, let cool. The divide the crustless pizza into four servings and store in air tight containers in the refrigerator. Perfect meal prep!

This looks great. My husband loves pizza, he has type 2 diabetes. My problem is, he doesn't like vegetables. The only ones he likes are green beans, lettuce, cucumber, corn, carrots and green peas. I know carrots, corn and green peas are not ok on keto. Any suggestions. He will eat olives.

My partner did not eat veggies either when we got together so I slowly introduced him to roasted potatoes then roasted potatoes and carrots then slowly added in Brussels sprouts with bacon and Parmesan and just kept adding them always with bacon crumbles. I made Cobb salads that he loves. It's tricky getting them to eat veggies. He now eats everything I make keto. He still likes his potatoes noodles and sugar though. I'm working on that. This has taken about 5 years. It won't happen overnight.
