This easy keto burrito bowl is filled with delicious juicy chicken, flavorful lime cauliflower rice, cheese, salsa, avocado, and a secret ingredient that you will have to keep scrolling to find out!
I love making a big bowl of food for lunch and mixing it up. Â You get a flavor bomb in every bite!
This keto burrito bowl comes together in a snap and we use one skillet to make the chicken and the cauliflower rice. Â I like to get everything made, all of my vegetables chopped, and everything in bowls so we can have a burrito bowl buffet and everyone can make their own.
So before I start chopping my chicken for these keto burrito bowls, I like to cut up my cilantro and tomatoes. Â That way I can wait to clean my cutting board after I cut the chicken.
Chicken for the keto burrito bowls
I like to cut up my 2 boneless skinless chicken breasts before cooking them so all of the seasoning can have more surface area to latch on to and the chicken cooks much more quickly. Â This results in super flavorful chicken that is finished in a flash.
I cook the chicken in a hot skillet with avocado oil. Â It is ready in a few minutes but to make sure it is cooked all of the way through, I use a meat thermometer and I check the largest pieces. Â When they are at 165F, I know my chicken is ready. Â I remove it from the skillet and I start working on my cauliflower rice.
Lime cauliflower rice
This super flavorful cauliflower rice for the keto burrito bowls couldn't be easier.  I use the same skillet as the chicken and I dump a 12 ounce bag of frozen cauliflower rice right into the skillet along with ½ cup of chicken broth.  I bring that to a simmer and let the rice cook until the broth evaporates and the rice is soft.  Finally I add in 2 tablespoons of lime juice to finish it off.
Secret ingredient
If you look close enough, you might have noticed beans in the photo!  Don't worry, they are Eden Black Soy Beans and they are perfectly keto friendly at only 2.5 net carbs per ¼ cup.  If you are not a fan of soy or if you are allergic, you can leave them out.  The avocados actually have more carbs than the black soy beans!
If you are worried about phytoestrogens, just keep in mind that cruciferous vegetables such as cauliflower, broccoli, and Brussels sprouts are also a rich source of phytoestrogens.

Keto Burrito Bowls with a Secret Ingredient!

Ingredients
- 2 tablespoons avocado oil
- 2 boneless skinless chicken breasts, cut into 1 inch pieces
- ½ teaspoon kosher salt
- ½ teaspoon garlic powder
- ½ teaspoon chili powder
- ½ teaspoon cumin
- 12 ounces frozen cauliflower rice
- ½ cup chicken broth
- 2 tablespoons lime juice
- 1 cup Eden Black Soy Beans
- 2 small Avocado, diced
- 1 cup shredded cheddar
- Salsa, chopped cilantro, and tomato for garnish
Instructions
- Heat the avocado oil in a large skillet over medium heat. Add the chicken breast followed by the seasonings and sauce until cooked through, stirring frequently, about 8 minutes. Remove from the pan and set aside.
- Add the cauliflower rice to the skillet and the chicken broth. Cook for about 8-10 minutes or until the chicken broth is evaporated. Stir in the lime juice.
Assemble the bowls
- In each bowl add ¼th of the chicken and cauliflower rice, ¼ cup of black beans, ½ of an avocado, ¼ cup shredded cheddar, and tomatoes, salsa, and cilantro for garnish.

Mmmmm-Mmmmm. Loved this one and will be making it again. Do you think you could replicate Qdoba's Citrus Lime Shrimp bowl? That one is packed with flavor and I would love to know how to make it myself!
