Feed that cheesecake craving with this ultimate Strawberry Cheesecake Chia Pudding! High in fiber but low in sugar, this sweet treat is a perfect dessert meal prep!
This chia seed pudding recipe really is the perfect breakfast meal prep. I like to make a batch and then divide it out into 4 equal portions and store it in the fridge for the week. This recipe easily doubles if you are looking to eat it for breakfast every morning or if you want to serve it to family. I have a few other keto chia seed pudding recipes including chocolate chia pudding, chia pudding with almond and cinnamon, and golden milk chia pudding.
Chia seeds are so amazing! They are packed with fiber and virtually zero net carbs. They are great added to smoothies, keto cereal, granola, the uses go on and on. My favorite use is of course, chia pudding!
I know a lot of people like to make chia pudding as like an overnight recipe, but I really like to make it in a saucepan on the stove top because it is so much quicker and you get to see right away whether you need more liquid. Chia seeds thicken in liquid so if you make an overnight refrigerator version, you might need more liquid and not know it! Then you are left with chia seeds that aren't quite plumped in your morning breakfast!
How to make the best keto chia pudding
Like I said, my favorite way to make chia pudding is on the stovetop in a saucepan. I add all of the ingredients to the saucepan over medium heat and stir until everything is combined and thickened. This usually takes on 5-8 minutes. It really is that easy to make keto chia pudding!
What makes this chia pudding keto is that we use a keto friendly sweetener such as Lakanto or Swerve. I know other recipes may use maple syrup or coconut sugar. But no this one! Those would contain quite a bit of carbs.
Recipe tips and notes:
- Feel free to use whatever fruit you have on hand. Strawberries are delicious but you could use blueberries, raspberries, or blackberries.
- Choose an almond milk that is unsweetened. These are usually 1 carb per serving
- You can use any keto friendly sweetener you like and sweeten to taste

Keto Strawberry Cheesecake Chia Pudding

Ingredients
- 2 cups unsweetened Almond Milk
- ⅓ cup sugar free powdered sweetener
- ½ cup chia seeds
- ½ teaspoon ground cinnamon
- ¼ teaspoon Kosher salt
- ½ teaspoon Vanilla Extract
- 4 ounces cream cheese
- 1 cup diced strawberries
Instructions
- In a medium sauce pan over medium heat combine, the almond milk, sweetener, cinnamon, kosher salt, vanilla extract, cream cheese, diced strawberries and lastly chia seeds.
- Make sure to whisk continuously to combine all the ingredients and to not scotch the bottom of your sauce pan.
- Cook for about 8 minutes or until your chia pudding begin is thick and the chia seeds are soft. Divide into 4 portions.
