Low Carb Berry Yogurt Bowl

Ingredients
- ½ cup Blueberries
- ½ cup Strawberries, chopped
- 1 tablespoon sugar free granulated sweetener (see my favorite on Amazon), for the berries
- ¾ cup Heavy cream
- 1 tablespoon Vanilla extract
- 1 ½ cups Plain greek yogurt
- ⅓ cup Sugar free granulated sweetener, for the yogurt
Instructions
- In a small saucepan over medium heat, combine the berries with the 1 tablespoon of sweetener. Cook for 5-8 minutes, until the berries release their juices. Remove from the heat and set aside.
- In a medium sized mixing bowl using an electric mixer, beat the heavy cream, vanilla, and remaining sweetener until stiff peaks form. Fold in the greek yogurt. Divide the mixture between 2 bowls and top with the berries or store the remaining serving in the refrigerator in an airtight container for meal prep.

That would not work. The cream needs to be able to be whipped into stiff peaks.
