Now we just place the lid and set it to cook on low for 8 hours or high for 4 hours.

The meat will literally fall apart when it is finished. I like to shred the meat right in the crock pot with the juices to keep this crock pot pork loin extra moist.
Most pork loins are around 5 pounds so I like to make the pulled pork and then freeze half of it for future recipes. You can freeze it for up to 6 months in a freezer safe container.

You would need to thaw it first. Frozen meats are not recommended for the crock pot. According to Slow Cookers and Food Safety guidelines, you should always thaw meat or poultry before putting it in a slow cooker.

Turned out wonderful. I did use real brown sugar in the bbq rub since we're not low carb. I didn't have quite enough time to cook on low the whole time so I did 1 hour on high and 6 on low. Meat fell apart and flavor was great even without bbq sauce. Definitely going to make again.

the brown sugar substitutes are usually formulated for measurement same as sugar. Monk fruit or stevia or similar supersweet is added to bring up to sugar equivalent.
