Keto Mug Cake - Chocolate, Vanilla, or Peanut Butter

Ingredients
- 1 Tablespoon Butter, melted
- 1 Tablespoon Coconut flour or 3 Tbsp Almond flour
- 2 Tablespoons sugar free granulated sweetener (see my favorite on Amazon)
- 1 Tablespoons Cocoa powder (For Chocolate Version)
- 1 Tablespoon Sugar free Peanut butter (For Peanut Butter Version)
- 1/2 teaspoon Baking powder
- 1 Egg, beaten
- Splash of vanilla
- 1 Tablespoon Sugar free Chocolate Chips
Instructions
For Chocolate
- In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds. Add the coconut flour or almond flour, sweetener, cocoa powder, baking powder, vanilla and beaten egg. Mix well. Microwave on high for 60 seconds, being sure not to overcook. If you overcook it, it will be dry. Top with sugar free chocolate chips of desired.
For Vanilla
- In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds. Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg. Mix well. Microwave on high for 60 seconds, being sure not to overcook. If you overcook it, it will be dry. Top with sugar free chocolate chips of desired or mix in before cooking.
For Peanut Butter
- In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds. Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg. Mix well. Swirl in the peanut butter. Microwave on high for 60 seconds, being sure not to overcook. If you overcook it, it will be dry. Top with sugar free chocolate chips of desired.
Notes
- Baking Instructions: Use an oven safe ramekin. Bake in the oven at 350 for 15-20 minutes.
So good, And also so easy using the microwave. We are trying to cut down on our electricity usage so back to using microwave and air fryer. Fingers crossed on air fryer that it doesn’t use as much electricity as the oven. But mainly keto recipes, yes, thank you!

I love this GF mug cake recipe. I actually make the chocolate one but put a tablespoon of peanut butter on top after it cooks ????
Well… I ended up making this twice, the first time absolutely hated it [ i substituted monk fruit extract, but I use the same amount, as if 1:1 ratio…. Which was hell!! for several hours, had a very bitter, odd taste in the mouth]
Then, i we’ll find out that it’s a tiny amount that should be used, of monk fruit extract, to match the 2tbs of other sugars. That was my second attempt…sooo much better!
Just made the vanilla and added blueberries and raspberries….touch of cinnamon in my husbands … and topped with whipped cream… . Omg sooooo good ????????

I made the chocolate cake, I did slightly alter it: 2tbsp of Almond flour 1x sweetener and I added 1 piece of 90% chocolate ( chopped) absolutely perfect!

Great recipe.!! I made it with coconut flour, and agar agar as an egg substitute ( 1 tsp to 1.5 Tbsp water), and brown sugar allulose+ monk fruit blend. It was delicious.
