    This chocolate keto mug cake in the microwave is another one of my favorite quick keto desserts! I give instructions for vanilla, chocolate, and peanut butter versions and you can make it with almond flour or coconut flour.  Keto chocolate mug cake is my favorite keto dessert recipe!

    Do you know how much I love my microwave?  I am team microwave!  Keto Mug Cake is another one of my favorite keto dessert recipes using that trusty machine!

    My 90 second Low Carb Bread is another one of my microwave recipes.  So good for sandwiches!

    This keto mug cake is so easy to make with only 6 ingredients.

    It's also easy and ready in under 5 minutes!

    For this keto mug cake, you can make it peanut butter, chocolate, or vanilla.

    Chocolate Keto Mug Cake

    For a keto chocolate mug cake, in a microwave safe coffee mug, melt the butter in the microwave for 10 seconds.  Add the coconut flour or almond flour, sweetener, cocoa powder, baking powder, vanilla and beaten egg.  Mix well.
    To make this keto chocolate dessert, microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar free chocolate chips of desired.

    Peanut Butter

    In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds.  Swirl around the inside of the mug or ramekin.

    Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg.  Mix well. Swirl in the peanut butter.
    Microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar free chocolate chips if desired (highly recommend to make this keto dessert over the top).

    Vanilla

    In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds.  Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg.  Mix well.
    Microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar free chocolate chips of desired or mix in before cooking.

    Toppings

    I like to top these keto mug cakes with sugar free chocolate chips, sugar free chocolate syrup, or whipped cream.

    Keto Mug Cake - Chocolate, Vanilla, or Peanut Butter

    Ingredients

    • 1 Tablespoon Butter, melted
    • 1 Tablespoon Coconut flour or 3 tablespoon Almond flour
    • 2 Tablespoons sugar free granulated sweetener (see my favorite on Amazon)
    • 1 Tablespoons Cocoa powder, (For Chocolate Version)
    • 1 Tablespoon Sugar free Peanut butter, (For Peanut Butter Version)
    • ½ teaspoon Baking powder
    • 1 Egg, beaten
    • Splash of vanilla
    • 1 Tablespoon Sugar free Chocolate Chips

    Instructions

    For Chocolate

    • In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds.  Add the coconut flour or almond flour, sweetener, cocoa powder, baking powder, vanilla and beaten egg.  Mix well.  Microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar free chocolate chips of desired.

    For Vanilla

    • In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds.  Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg.  Mix well.  Microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar free chocolate chips of desired or mix in before cooking.

    For Peanut Butter

    • In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds.  Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg.  Mix well. Swirl in the peanut butter.  Microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar free chocolate chips of desired.

    Nutrition for chocolate mug cake with almond flour and no chocolate chips: 312 cal / 28g fat / 7 carbs / 4g fiber / 12g protein
    Nutrition for peanut butter with almond flour and no chocolate chips: 395 cal / 35g fat / 8 carbs / 4g fiber / 15g protein
    Nutrition for Vanilla with almond flour and no chocolate chips: 303 cal / 28g fat / 5 carbs / 2g fiber / 11g protein
    • Baking Instructions: Use an oven safe ramekin.  Bake in the oven at 350 for 15-20 minutes.

      I discovered a while ago that mixing the almond flour and coconut flour, (half of each measure) gives a good wheatflour texture to a keto cake. This chocolate mug cake turned out very well. I put half the mix in two ramekins, and cooked for 45 seconds. A whole mug cake is too much for me and cutting in half doesn't work as well as splitting the mix.

      Delicious! I made the vanilla one because I have been craving a sweet treat. I added pumpkin spice and used only one tablespoon of sugar substitute. Topped with almond and coconut whipped cream!

      This was very good. I made a strawberry version using some Anthony's strawberry powder I got from Amazon and sprinkled a few sf white choc chips on top. I did use less sweetener than called for because I k ow I don't like things very sweet anymore. Really enjoyed - thanks!

      I had a bad sweet tooth one night & I stumbled upon this recipe because I already had the ingredients on hand.       I made the chocolate (without chocolate chips) and the peanut butter both with almond flour. I added a pinch of salt to each. I didn't use this as a mug cake, though. I put it into my waffle iron. Each batch made two delicious waffles! This is going into my regular brunch rotation!

      I make low carb deserts for my diabetic husband. This mug cake recipe is easy and following the recipe as written made a perfect cake. If I didn't know it was keto, I wouldn't thought it was.       This perfectly satisfied my bf's and my craving for late-night cake!
      My thoughts and experience:
      Coconut flour, chocolate flavor.
      Halved the sugar replacement. Added a pinch of salt to the mug too. I also wished I had mixed the dry ingredients before adding the wet stuff to prevent clumps. Minor clumps, but delicious taste! The cake itself is springy and light, but still feels like a legit cake.

      So good! I am a dessert lover but also a health watcher. This sounded right up my alley...and it was!! I made the chocolate with almond flour and added in almond/cashew butter instead of peanut butter. Topped with some chocolate chips and coconut milk. It's a delicious keeper!!

      Super yummy! So moist and delicious. This is the best mug cake I have ever tried! I made the chocolate one this time, next time I will try adding peanut butter. I made the recipe as listed and used coconut flour for the flour. Once again Yummy!!!

      This is my go to mug cake recipe. It is easily adaptable. Make the chocolate and add a dollop of peanut butter, make the vanilla and add a few frozen berries, make the vanilla and add a splash of maple and rum extract with a few chopped walnuts. As soon as I get more banana extract, going to try it too!

      Made the vanilla version with coconut flour and it was very good. After it was done I stuffed a piece of Russell Stover sugar-free candy in the middle and it melted nicely...yummy. It was a bit dry so I might lower the time to 50 seconds next time or try it with almond flour or a mixture of the two. I did use a 10 oz. ramekin so the larger surface may be the reason it was dry.
