If you are a peanut butter lover like me, you will have this sweet treat in your freezer at all times.  This along with my Keto Peanut Butter Bars Recipe  and keto chocolate fudge keeps all of my sweet cravings under control!

Unsweetened peanut butter

When you are looking for a peanut butter for this fudge recipe, make sure you find one with the only ingredient being peanuts and maybe salt.  So many store bought peanut butters are filled with sugar and added oil and that stuff is just not necessary!

The process for making this fudge couldn’t be any easier.  I use the microwave for simplicity!  I also love to use my microwave to make keto 90 second bread and keto mug cakes.

Recipe tips and notes

  • Use peanut butter with the only ingredients being peanuts and maybe salt
  • If you do not like to use a microwave, you can place the mixing bowl over a saucepan of simmering water and stir until the peanut butter and butter are melted.
  • If you have a peanut aversion or allergy, you can also use almond butter

Instructions

  • Line the inside of a 8x4 loaf pan with parchment paper, leaving the edges long enough to pull fudge out once it's set. Spray with cooking spray and set aside.
  • Place peanut butter and butter inside a microwave safe bowl. Microwave for 1 minutes or until butter is melted and peanut butter is soft enough to mix.
  • To the peanut butter and butter, stir in the heavy heavy cream and sweetener. Stir until all ingredients are combined equally and there are no lumps.
  • Pour fudge mixture inside already prepared loaf pan. Chill in refrigerator until fudge is set. Should take about a hour. Slice into 14 equal portions and serve. Keep stored in the refrigerator or freezer.

Excellent! So easy to make. Better than commercial sugar filled fudge. I added salted peanuts and next time will toss in some Choc Zero Chocolate Chips. Thank you Jennifer

OMG, this is so tasty. Creamy, and just satisfying to your mood and taste buds. Jen just seems to knock it out of the park. This is a woman who preaches what SHE does. OMG. Love her.

I grew up with my mom making peanut butter fudge on the stovetop, and I have missed it so much. This recipe is phenomenal: delicious! Even my husband says it tastes like my mom’s fudge, and he’s not even Keto! Thank you!

    Hey Jennifer:

Have you made a fudge with chocolate yet? Or maybe chocolate and peanut butter?

    Thanks.

SO good! I made this and noticed it matches the process for the chocolate fudge, to which I added natural peanut butter, btw, so I knew this was going to be awesome! Thank you!
