Keto Mug Cake - Chocolate, Vanilla, or Peanut Butter
INGREDIENTS
- 1 Tablespoon Butter, melted
- 1 Tablespoon Coconut flour or 3 Tbsp Almond flour (click here to see my favorite brand)
- 2 Tablespoons Granular Sweetener (Click here to see my favorite on Amazon)
- 1 Tablespoons Cocoa powder (For Chocolate Version)
- 1 Tablespoon Sugar free Peanut butter (For Peanut Butter Version)
- ½ teaspoon Baking powder
- 1 Egg, beaten
- Splash of vanilla
- 1 Tablespoon Sugar free Chocolate Chips (Click here to see my favorite brand on Amazon)
INSTRUCTIONS
For Chocolate
- In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds. Add the coconut flour or almond flour, sweetener, cocoa powder, baking powder, vanilla and beaten egg. Mix well. Microwave on high for 60 seconds, being sure not to overcook. If you overcook it, it will be dry. Top with sugar free chocolate chips of desired.
For Vanilla
- In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds. Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg. Mix well. Microwave on high for 60 seconds, being sure not to overcook. If you overcook it, it will be dry. Top with sugar free chocolate chips of desired or mix in before cooking.
For Peanut Butter
- In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds. Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg. Mix well. Swirl in the peanut butter. Microwave on high for 60 seconds, being sure not to overcook. If you overcook it, it will be dry. Top with sugar free chocolate chips of desired.

- Baking Instructions: Use an oven safe ramekin. Bake in the oven at 350 for 15-20 minutes.

this is by far the best recipe for keto cake I have ever used. I ended up halving the amount of sweetener and cooking it for a bit longer. ( in Germany maybe the power is different in the machine) The cake is moist, tasty and so fast to make. Straight out of the microwave I top it with a couple of pieces of 80% dark chocolate.

Just made it, yummy! I made the one with cocoa powder, added some peanut butter on top while it was hot and sprinkled onsome keto granola. Accidentally added one tbl spoon coconut flour AND a tbl spoon almond four, came out like a chocolate cake base.

Best mug cake recipe I’ve found – by far. Both times I’ve made it, I’ve used coconut flour, Keto cocoa powder, almond butter, and Truvia. I love that it gives me my dessert fix, is filling, and keeps me in ketosis.
When I first made it, I put it in a ramekin and it overflowed BIG TIME (still tasted good). Maybe ramekins come in different sizes but I don’t see how this recipe can fit into one (even if it were just the vanilla one with coconut flour). Definitely use a mug.
I found that 45 seconds works well (with my microwave, at least). However, I feel like some parts were overcooked and some parts were undercooked, so I plan to play with the power and cook time settings to figure out what works best.

I’m not sure why people are saying it tastes like scrambled eggs. Honestly, I think it’s something they are doing or their microwave. I have made this several times and have always been successful. You may want to let the melted butter cool just a bit before adding the egg, that may be the issue? I’ve tried the chocolate and vanilla and I have experienced with different variations too. Thanks for a simple, easy and fast dessert idea for one! It definitely satisfies my sweet tooth 🙂

I made the vanilla version exactly as the recipe called for and it was not good. It was very eggy tasting and to me and my husband, it was like eating a sweetened, scrambled egg cake. I even tried the recipe twice and neither one of us could get past the eggy taste. I don’t know if that’s what it’s supposed to taste like, but the egg was overwhelming. I did not use extra large eggs either.

I made the chocolate version with coconut flour and Swerve confectioner’s sugar replacement. Would you mind breaking down how you got 7 grams total carbs for yours, because when I put all the ingredients in my carb counter (I use Carb Manager), it added up to 34.5 gms total carbs. That does include the chocolate chips (Lily’s) for 8 gms carbs, but still much higher than what your recipe states. Thanks!

I made this and something didn’t come out right. The taste was terrible. I think I didn’t use enough stevia. It had an aftertaste. Any suggestions on what I possibly got wrong? I plan to try it again. I tried the vanilla one. I’ve only been on keto a week so I’m new to this.

OhMyGosh! I just made the vanilla option and baked it in the oven. It is so delicious. Mine did take 15-16 minutes but I started watching it closely at 10 minutes. This may have also been because I baked it in a round glass container and not a mug. I also used coconut flour as I was out of almond flour. This is going in my recipe book for sure.
