Keto Mug Cake - Chocolate, Vanilla, or Peanut Butter

Ingredients
- 1 Tablespoon Butter, melted
- 1 Tablespoon Coconut flour or 3 tablespoon Almond flour
- 2 Tablespoons sugar free granulated sweetener (see my favorite on Amazon)
- 1 Tablespoons Cocoa powder, (For Chocolate Version)
- 1 Tablespoon Sugar free Peanut butter, (For Peanut Butter Version)
- ½ teaspoon Baking powder
- 1 Egg, beaten
- Splash of vanilla
- 1 Tablespoon Sugar free Chocolate Chips
Instructions
For Chocolate
- In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds. Â Add the coconut flour or almond flour, sweetener, cocoa powder, baking powder, vanilla and beaten egg. Â Mix well. Â Microwave on high for 60 seconds, being sure not to overcook. Â If you overcook it, it will be dry. Top with sugar free chocolate chips of desired.
For Vanilla
- In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds. Â Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg. Â Mix well. Â Microwave on high for 60 seconds, being sure not to overcook. Â If you overcook it, it will be dry. Top with sugar free chocolate chips of desired or mix in before cooking.
For Peanut Butter
- In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds. Â Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg. Â Mix well. Swirl in the peanut butter. Â Microwave on high for 60 seconds, being sure not to overcook. Â If you overcook it, it will be dry. Top with sugar free chocolate chips of desired.
Notes
- Baking Instructions: Use an oven safe ramekin. Â Bake in the oven at 350 for 15-20 minutes.

Absolutely fab, just used stevia sweetener about 3/4 of a Tbsp and almond flour and put in the microwave for 50 seconds . It was absolutely delicious served with plain yoghurt

Just made this, with almond flour, and it is delicious! I also added some peanut butter and dark chocolate pieces on top. Totally scrummy! Cooked it for one minute and was nice and light. Other recipes I’ve tried have been a bit rubbery. Not this one!??

This was lovely! Once it as done I put a couple of choc chips on top as suggested, flipped upside down into a bowl and pushed a small square of chocolate into the top.

Oh boy Jennifer, I make this way too often!! I use almond flour and throw a couple small dark chocolate squares on top before cooking, they sink to the middle for even more deliciousness. This cake is quick, very moist and yummy.

So my 8-year-old sister isn't doing keto but if she likes something that I'm eating she will eat it! and this was one of them! She took my cake! but I don't care cause I enjoyed watching her eat happily. This was a good recipe! I baked this instead of microwaving because 1 -I exploded the microwave and 2 - my mom doesn't want me to use the microwave anymore! (She is a natural doctor)

We tried this, both ways. It is delicious but when we made it Vanilla style, it only rose half as much.
I have trouble with the grainyness of the end result with the coconut flour, but I will persevere and possibly try to grind it finer. Perhaps that will help with the mouth feel, which is the part of the recipe that I don't like.

I don't recommend making the vanilla version with coconut flour, It just comes out like a sweet egg. I imagine it would be better with the almond flour so I'll try that and give my feedback

I find that it "bakes" better if you use a wide mouthed coffee cup. I have done both ways, and strongly prefer the wide-mouthed cup.

I have to add my vote! I have tried several keto mug cake recipes and they were ALL dry! This one is not. It smelled a little eggy when it was cooking but does not taste eggy. I made the chocolate with the almond flour and I will be making this again....and again....it is the absolute best! Not dry and a few Lily's chocolate chips made it decadent.

Oh my freaking god, this recipe is AMAZING. Discovered it last week as me, my wife, and my dad recently went keto. I was craving something sweet, so we made 1 mug to share. It was so good that I printed out the recipe (which I haven't done for years) and stuck it on the fridge. 6/5, really a home run and so easy!
We made it with coconut flour and it turned out excellent. We have made it 3 times since then. I put a dollop of peanut butter in the last time, and it was great!
Tip for anyone reading: be careful to thoroughly combine the ingredients...on time 3 of making the cake, there was a little pocket of scrambled egg which was 100% my fault for not mixing properly.

I tweaked the recipe to make a pumpkin spice version for fall. I replaced the cocoa powder with pumpkin pie spice and added three small dollops of cream cheese sweetened with the Swerve sugar, microwaved it for 1:30 minutes, and topped it with cinnamon and Swerve sugar. So good and a great way to get pumpkin spice in a keto way.

OMG! I’ve made mug cakes before, only to throw them out because they were disgusting. This was delicious. My husband loved it and kept saying it can’t be Keto.
