    Keto Mug Cake - Chocolate, Vanilla, or Peanut Butter

    This chocolate keto mug cake in the microwave is another one of my favorite quick keto desserts! I give instructions for vanilla, chocolate, and peanut butter versions and you can make it with almond flour or coconut flour.  Keto chocolate mug cake is my favorite keto dessert recipe!

    Do you know how much I love my microwave?  I am team microwave!  Keto Mug Cake is another one of my favorite keto dessert recipes using that trusty machine!

    My 90 second Low Carb Bread is another one of my microwave recipes.  So good for sandwiches!

    This keto mug cake is so easy to make with only 6 ingredients.

    It's also easy and ready in under 5 minutes!

    For this keto mug cake, you can make it peanut butter, chocolate, or vanilla.

    Chocolate Keto Mug Cake

    For a keto chocolate mug cake, in a microwave safe coffee mug, melt the butter in the microwave for 10 seconds.  Add the coconut flour or almond flour, sweetener, cocoa powder, baking powder, vanilla and beaten egg.  Mix well.
    To make this keto chocolate dessert, microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar free chocolate chips of desired.

    Peanut Butter

    In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds.  Swirl around the inside of the mug or ramekin.

    Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg.  Mix well. Swirl in the peanut butter.
    Microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar free chocolate chips if desired (highly recommend to make this keto dessert over the top).

    Vanilla

    In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds.  Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg.  Mix well.
    Microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar free chocolate chips of desired or mix in before cooking.

    Toppings

    I like to top these keto mug cakes with sugar free chocolate chips, sugar free chocolate syrup, or whipped cream.

    Ingredients

    • 1 Tablespoon Butter, melted
    • 1 Tablespoon Coconut flour or 3 tablespoon Almond flour (click here to see my favorite brand)
    • 2 Tablespoons Granular Sweetener (Click here to see my favorite on Amazon)
    • 1 Tablespoons Cocoa powder (For Chocolate Version)
    • 1 Tablespoon Sugar free Peanut butter (For Peanut Butter Version)
    • ½ teaspoon Baking powder
    • 1 Egg, beaten
    • Splash of vanilla
    • 1 Tablespoon Sugar free Chocolate Chips (Click here to see my favorite brand on Amazon)

    Instructions

    For Chocolate

    • In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds.  Add the coconut flour or almond flour, sweetener, cocoa powder, baking powder, vanilla and beaten egg.  Mix well.  Microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar free chocolate chips of desired.

    For Vanilla

    • In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds.  Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg.  Mix well.  Microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar free chocolate chips of desired or mix in before cooking.

    For Peanut Butter

    • In a microwave safe coffee mug, melt the butter in the microwave for 10 seconds.  Add the coconut flour or almond flour, sweetener, baking powder, vanilla and beaten egg.  Mix well. Swirl in the peanut butter.  Microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar free chocolate chips of desired.

    • Baking Instructions: Use an oven safe ramekin.  Bake in the oven at 350 for 15-20 minutes.

      I made the peanut butter one and mixed Lily's chips in the mix and used coconut flour and OMG!!! ITS MY FAVE!!! Of all the mug cakes I've tried this one by far is the best of the best. It had the most "normal" taste instead of the diet-y taste most have.

      I've made all three versions of this recipe, they are all very good, my fave is the chocolate because it has an even better texture than the others. I've also varied the chocolate one by adding some orange extract, today I tried chocolate with 1 tbsp. Of chunky peanut butter, it was also wonderful. Thanks for sharing your great recipes.

      I was a little skeptical about this recipe becuase I dont like the eggy keto friendly baked substitutes I've tried to make in the past. But this was a small investment of time and effort so I figured why not. I'm pleasantly surprised! The ratio is right on this one, yes its a bit eggy as expected but it tastes great and the texture isn't rubbery. It's a great trade off.

      I made the vanilla, but added 1 teas cinnamon and cooked in microwave 90 seconds. Excellent texture and flavor. Use a tall mug to avoid a mess. Next I'll try orange extract for breakfast. Thank you.

      I made the vanilla cake with coconut flour and just 1Tbsp of Monkfruit sweetener. Then put Lily's Dark Chocolate baking chips on top afterwards. Wow! So delicious, wonderful texture, very quick and easy to make. Definitely my go to for a satisfying treat. Thank you!!

      This is so yum, best mug cake recipe I’ve ever tried. All the versions come out moist, and have no egginess. I use 2tbl Allulose sweetner, perfect, not cloyingly sweet. I finish it off with a drizzle of Choc Zero Nutella sauce and a dollop of homemade cream. OMG, the money I have spent trying and throwing away keto desserts, when I could have been making this.this is my weekly indulgence and has helped me keep my keto lifestyle without feeling I’m missing out.

      I think I figured out why the recipes in my Carb Manager app has so many more total carbs than your recipe.I think the people who enter the macros on the app are not using the correct amounts to measure by. They are using incorrect forms of measure when inputting their information. ”
      Someone even put your recipe in the app and it is showing up with 26 carbs per serving. Now I know from reading your recipe that is false information.

      Why is there such a discrepancy of total carbs between your recipe and what I found on Carb Manager app. The difference I see is your recipe only calls for one Tbs of almond flour whereas the recipe on carb manager is two Tbs.

        Yes, and no one else has thought it was too sweet to my knowledge. What sweetener did you use? Is it a 1 for 1 substitute for sugar?

      This is SO good! I have never made a microwave mug cake and I am so glad this recipe was my first. I made the vanilla mug cake and used coconut flour, allulose for the sweetner, didn't have choc chips and it turned out delicious! So fluffy! For me personally next time I'm going to sub the egg for arrowroot flour just to see if it could be done because I like saving my eggs for breakfast & I'm going to reduce the allulose to 1 & 1/2 Tbspn because my sugar tolerance has reduced hence the cake was a little too sweet for me. Overall I am so glad I found this recipe. Thank you Jennifer!

      The cakes are great, but just a warning, the carbs are really high as 2 TBSP of erythritol or monkfruit sweetener equals 24 carbs.. blessings!

        Those are sugar alcohols and do not count as the body does not process them. the FDA requires they be added to carbs

      OMG this is so good - I made two in the past 15 minutes. Used almond flour for both, first just vanilla with splash of lemon extract and the second I tried with cacao powder. This recipe is dangerous! Thanks for sharing though 🙂

      I’m honestly surprised at how good this is. We have an amazing keto bakery near us, so we are pretty spoiled (and picky). But it’s expensive and not open when those 9pm cravings hit. These little cakes are a perfect fit. Sufficient caky texture and just sweet enough without being cloying. Peanut butter version topped with a few sugar-free chocolate chips is awesome! But so is the plain vanilla version (we like this one topped with a pat of butter actually). Generally I triple the recipe and use 6 Tbspns almond flour and 1 tbspn coconut flour which gives a great texture and doesn’t taste too coconutty.

      Surprised at how good this is! I made the chocolate one using 1 Tbsp coconut flour instead of 3 Tbsp almond flour. I left out the chocolate chips and we had it with a little whipped cream. Delicious and would definitely make again.

      All great recipes. However, I would have thought you would have topped the Vanilla Cake with White Chocolate Chips. And the Peanut Butter Cake with Peanut Butter Chips...instead of Chocolate Chips on all three versions.

      This is soooo good! My 3 year old is on an extremely limited diet, so it’s hard to find ‘treats’ that he can have, especially easy ones.
      This was PERFECT! I made the vanilla version and used Miyokos dairy free butter and 1 t honey in place of the sugar.

      I have gestational diabetes and was craving cake after all the parties I've been to recently, and this SOOOO hit the spot! I made the chocolate version with Hershey's special dark cocoa and I substituted the sweetener for 3 teaspoons of Truvia, which was the PERFECT balance! I also stirred the chocolate chips into the batter. Best mug cake ever with real cake texture!

      I made 2 of the peanut butter one the other night, accidentally putting cocoa powder in one so I kept it up and added a few lily chips on top of that one-Oh em gee! So amazing and I too have made several mug cakes through the years! These are superior. So I couldn't mix them well enough in the ramekin so I mixed in a small bowl then poured into ramekin sprayed w/ olive oil spray. So close to a traditional flour cake I couldn't believe it! make this and toss all other recipes. A real keeper, thank you for posting!

        Just have to say thank you for this recipe the cake is so good. I made the chocolate cake and added peanut butter and sugar free chocolate chips. Mmmm delicious. Thought about trying the Vanilla next and adding blueberries and a little sugar free syrup since so many said it tasted like a pancake.

      I’m allergic to almonds so I made the peanut butter one with coconut flour. Wow! This was my first coconut flour success! I was so ready to give up on coconut flour but decided to give it one more try. I’m so glad I did. And a splashed a bit of cream on the top. So good.

      I have made so many of these!!! From a Morning coffee cake with lemon and blueberry to an almond butter chocolate cake topped with caramel Keto ice cream. They are so versatile and UNBELIEVABLY ADDICTIVE. Thank you for the recipe!
