    Easy Keto Pancakes

    These keto pancakes with cream cheese are super easy to make.  Just blend the ingredients in a blender cup and put into a hot pan (electric mixer instructions also provided).  I also give instructions for coconut flour or almond flour.     Keto Pancakes Recipe

    This is one of the very first recipes I posted to my blog way back in 2016. It has stood the test of time for being a really delicious pancake recipe. These low carb pancakes have amazing flavor and texture and only 5 net carbs.

    These are technically keto cream cheese pancakes. I like the addition of cream cheese to help cover the egg flavor so we don't have that eggy taste so common with keto baked goods.

    Different varieties

    In the instructions below I give an option for coconut flour or almond flour. You could also stir in some blueberries, chocolate chips, or lemon zest for such great flavor.

    Serving suggestions

    When I make pancakes, that is usually all I have, but I also occasionally have some sausage for some added protein. My Homemade Turkey Sausage is a delicious addition for a nice hearty breakfast.

    Keto Pancakes with Coconut Flour or Almond Flour

    These keto pancakes with cream cheese are super easy to make.  Just blend the ingredients in a blender cup and put into a hot pan.  No hand mixing or dirty bowls to wash!  Add your favorite mix-ins for more variety.

    Ingredients

    • 2 oz Cream Cheese, softened
    • 2 Large Eggs, room temperature
    • 2 tablespoon Coconut Flour or 4 Tablespoons Almond Flour
    • 1 teaspoon sugar free granulated sweetener (see my favorite on Amazon)
    • ½ teaspoon Baking powder
    • pinch of salt
    • splash of Vanilla extract
    • 1 teaspoon Lemon Zest, optional

    Instructions

    • Heat a non-stick pan or griddle over medium heat and spray with cooking spray or melt a pat of butter or coconut oil in the pan.
    • Combine all ingredients in a blender and pulse until mixed. Alternatively, you can combine the cream cheese and eggs in a bowl and mix well with an electric mixer, then add in the remaining dry ingredients and vanilla.
    • Pour the batter into the heated skillet to make a pancake approximately 4 inches across. Continue with the remaining batter. You may need to work in batches.
    • Brown for a few minutes on both sides and remove from the pan to a plate. Serve hot with butter and sugar-free syrup, if desired.

      I tried making these this morning but since I was out of eggs I used a flaxseed/water mixture enough to substitute 2 eggs. It didn't work. Smells good but is not holding together on the griddle when I flip.

      Loved the breakfast pancakes. Somehow I read the directions incorrectly and put both flours in, wow what flavor. Using Reddi Whip and blue berries for topping. I will cook them again using the correct measurements of flour next time. Love your recipe s.

      I loved the Keto pancakes! I went a little bit nuts lol. I added an over medium egg and made a sandwich lol and I added a few peacans. Lastly, I added whip cream and four blueberries! Yummy

      If you want fat & fiber with no added carbs, and can stand a grainier texture, I added a couple tablespoons of ground flax seed and and extra egg. Turned out yummy.

      These pancakes were great! I was at the bottom of the flour bags so I used 2 tbsp coconut & 4 tbsp almond for a double batch. Texture was good & loved the lemon zest. Didn’t have syrup on habd so used whipped cream & a couple of blueberries - such a treat! Thank you for the recipe!

      Sorry to hear that! If you have thin pancake batter, more dry would be needed. A little more almond flour should have done the trick.

      Hi,
      I've started Keto but not fully. My son has severe nut allergy so for these pancakes (not using regular flour) what flour can u reccommend?

      My Mum made pancakes yesterday I really wanted lemon and sugar pancakes, I resisted, so I am definitely giving these a go !
      Do you realize if you replace the almond flour with whey protein powder you get cheesecake ingredients ! I wonder if they would taste like cheesecake ?
